Baked Chicken Tenders with Parsley & Smoked Paprika accompanied by Sautéed Kale with Shallots and Mixed Roasted Vegetables

Chicken:
Place the chicken tenders on a baking sheet.
Drizzle with extra virgin olive oil.
Sprinkle sea salt & smoked paprika.
Add fresh parsley and squeeze some lemon juice over the tenders.

Bake at 350 degrees for approx. 20 minutes.

Chix Tenders

Mixed Roasted Vegetables:
Chop carrots, celery, zucchini, mushrooms, tomatoes and shallots and place on a baking sheet.
Drizzle with extra virgin olive oil & sprinkle sea salt.
Toss to coat veggies evenly.

Bake at 350 degrees for approx. 20 minutes.

Sautéed Kale with Shallots:
Place chopped kale and 1 medium shallot in a deep sauté pan.
Add ¾ cup of water
Drizzle with extra virgin olive oil & sprinkle sea salt.
Cover and cook over medium heat, tossing every so often.

The kale will reduce to approx. half its original size (approx.. 20 minutes).

Once all veggies are finished mix together in a large bowl.  So much flavor and so little calories!!!!!
