Cheesy Mashed Cauliflower

I llloooovvvveeee mashed potatoes – but my backside, thighs and belly don’t! So when I’m craving some starchy comfort foods I turn to old faithful….MASHED CAULIFLOWER! I don’t normally add cheese, but hey – you can’t be good all the time. I consider that to be a treat!

Ingredients • 1 head of cauliflower • Shredded Mozzarella Cheese (2 handfuls) • 2 Tablespoons Butter • Salt & Pepper (to taste) • ¼ cup Milk • 2 cups Water

Directions • Wash cauliflower head • Place “face” down in a pot so the base/stem is facing up • Add water • Cover and cook over medium-high heat for approx. 30 minutes or until the veggie is fork tender • Drain the water from the pot • Remove the stem and leaves (much easier when steamed) • Mash • Add butter, milk & cheese • Serve hot
