Broiled Smoked Paprika Salmon over Sauteed Garlic Zucchini

Cooking for one is such a challenge for me but I think I nailed it last night with this dish!

Ingredients:
1 salmon fillet
smoked paprika
extra virgin olive oil
oregano
sea salt
½ of a small zucchini (peeled slices)
2 medium garlic cloves (chopped)

Directions:
Drizzle salmon fillet with olive oil.
Sprinkle fillet with smoked paprika, sea salt & oregano.
Broil for 10 minutes.

Cover bottom of a medium fry pan with olive oil, add chopped garlic and sea salt.
Cut zucchini in half, take a vegetable peeler and start shaving zucchini slices into the pan.
Sautee until the zucchini wilts a bit and warms through (2-3 minutes).

Plating:
Presentation is everything – even if you’re only cooking for yourself!

Place the zucchini and garlic on a plate.
Place the salmon on top of the zucchini.
Sprinkle with crumbled feta cheese.

I spent $9.60 at the grocery store so both my wallet and tummy were happy . I delicious deal indeed!
