Yet another creation born out of laziness and a dwindling wallet. I bring lots of eggs, produce and tofu with me to work and leave it there so I can eat healthy throughout the week. My “go to” dish recently has been and apple, celery & tofu salad. My latest concoction for the salad is a cream cheese and mustard dressing. It was creamy, tangy and didn’t mask the flavor of the ingredients. I lovely compliment indeed. Here’s the recipe:
3 single serving packs of cream cheese
3 single serving packs of mustard
1 apple (chopped)
2 celery stalks (chopped)
Tofu (single serving-chunked)
Place cream cheese in a bowl and soften in the microwave for 30 seconds.
Mix in tofu apples & celery
