Chicken Breast Stuffed with Sausage & Blue Cheese & Garlic, Horseradish Mashed Potatoes

This is sumptuous comfort food for one that hits the spot and is beyond satisfying!

1 chicken breast
2 Italian sausage links
4 medium Yukon Gold potatoes
2 medium cloves of garlic
2 Tablespoons of horseradish spread
1/4 cup of extra virgin olive oil
salt & pepper to taste
Montreal Chicken Seasoning to taste
2 Tablespoons of blue cheese
2 toothpicks

Preheat oven to 350.
Wash, peel & chop the potatoes & place in a pot. Add enough water to the pot just until the potatoes covered and the chopped garlic. Cover with a lid and bring to a boil.
Remove sausage meat from the casing and brown in a frying pan.
Butterfly the chicken breast and sprinkle the inside with Montreal Chicken seasoning.
Place cooked sausage inside the chicken breast, add blue cheese, fold over and close. Secure with toothpicks.
Place breast in a baking dish, drizzle with extra virgin olive oil, sprinkle with salt & pepper.
Add remaining sausage to the baking dish and bake for 30-40 minutes (depending upon thickness of the breast).
When potatoes are fork tender, drain the water from the pot (reserving the garlic), mash, add a splash of milk, 2-4 pats of butter and the horseradish spread. Mix well

Plate and enjoy!
