So simple and so delicious.
Skin the chicken.
Drizzle extra virgin olive over it.
Add salt & pepper to taste.
Wash & chop your veggies (leaving the potato skin on).
Place in a bowl and toss with extra virgin olive oil, salt & pepper.
Pour all food into a roasting pan.
Set oven to a BROIL (low setting)
Cook (covered) for approx. 20 minutes.
Uncover the pan, toss veggies, set BROIL to HIGH and cook for another 10 minutes.
