Broiled Breaded Boneless Ginger Pork Chop with Sautéed Veggies

Ingredients

  • 1 boneless pork chop (thick cut)
  • 1 bag baby spinach
  • 1 large shallot
  • 1 medium pablano pepper
  • Extra virgin olive oil
  • Salt & pepper (to taste)
  • Ginger (powdered)
  • Bread crumbs

Directions
• Heat broiler
• Place pork chop on a plate
• Drizzle chop (both sides) with extra virgin olive oil
• Roll in bread crumbs
• Moderately sprinkle chop with ginger, salt & pepper (to taste)
• Transfer to a baking sheet and broil for 10-15 minutes (check after 10 give more time if needed)
• While meat is cooking chop shallot and pepper, and add to a large frying pan
• Drizzle with extra virgin olive oil, salt & pepper (to taste)
• Sautee over medium heat until fork tender
• Add baby spinach to the pan with a little bit of water, cover the pan and let the spinach steam and reduce

Plate and enjoy!
