There’s nothing like marinara made from fresh tomatoes. If you don’t all day to make your sauce, gravy, or as my father would say, sugo, this is a perfect alternative. It’s easy, time friendly and most importantly, it’s DELICIOUS!
6 medium/large tomatoes
4 large cloves of garlic
Extra virgin olive oil
Salt & pepper
Basil (fresh or dried)
Oregano (fresh or dried)
1/2 cup vegetable broth
Coat a large frying pan with extra virgin olive oil
Chop your garlic, add to the pan and sweat over medium/low heat (you don’t want the garlic to cook too quickly and burn)
Chop your tomatoes into chunky slices and add to the pan
Sprinkle with salt & pepper (to taste), more olive oil (to coat the tomatoes), vegetable broth, capers, basil, oregano and stir (carefully)
Cook over medium heat, bringing it up to a slow boil, stirring occasionally.
When the tomatoes begin to break down start smushing them down to break apart
After about 10-15 minutes turn the heat to medium/low and cook for another 15 minutes
In about 30 minutes you have a beautiful, fresh and sumptuous sauce! It’s that easy!
