Easy Bake-Take Appetizers

Will you be attending many seasonal gatherings?  Are you running out of ideas of quick, easy and delicious appetizers to bring along?  Well here are four (4) that take 20 minutes or less to make:

Prosciutto Wrapped Roasted Asparagus

Asparagus Prosciutto

  • Cut the ends off the asparagus
  • Rinse and pat dry
  • Place on a baking sheet, drizzle with extra virgin olive oil, salt 7 pepper
  • Toss to coat all spears
  • Roast in the oven at 350 degrees for approx. 15-20 minutes (until al dente)
  • Let cool and wrap with prosciutto

Hot & Cheesy Taco Dip

Taco Dip

  • Brown 1 lb. ground beef or ground turkey & drain the grease
  • Place meat in a baking dish and add:
    • 1/2 jar of salsa
    • 2-3 heaping tablespoons of sour cream
  • Mix well and spread flat in the pan
  • Top with shredded cheddar cheese and pre-cooked bacon-chopped (found in the grocery store with the raw bacon)
  • Bake at 350 degrees until the cheese melts

Spinach Balls

  • 2 packages chopped spinach (thawed and drained)
  • 1 cup herbed stuffing (by Pepperidge Farms)
  • 2 cups parmesan cheese
  • 2-3 medium cloves of garlic (minced)
  • 6 eggs
  • salt & pepper (to taste)
  • 1 cup shredded mozzarella cheese
  • 1/2 stick butter (melted)
  1. In a large mixing bowl, combine all ingredients
  2. Form into “meatballs”
  3. Place on a baking sheet and bake for 20-25 minutes at 350 degrees
  4. Serve hot

Tomato Artichoke Salad with Mozzarella and Basil

Tomato Salad

  • Slice red and yellow cherry tomatoes in half
  • Drain 1 large jar of marinated artichoke hearts
  • Chop 1 package of smoked mozzarella
  • Chop 1 medium ball of fresh mozzarella
  • Chop 1 cup of fresh basil
  • Place all ingredients in a bowl, add salt & pepper and mix well
  • Let it sit and marinate in the refrigerator for an hour before serving
