Filo Bites

These quick and easy appetizers are the perfect finger food for parties. Elegant, delicious and so easy to make!

Tapendae Tomato Filo Bites

Ingredients

  • 2 boxes tomato filo cups
  • 2 cans pitted black olives
  • 1 small jar capers (drained)
  • 1 1/2 cups basil (chopped)
  • extra virgin olive oil
  • shredded mozzarella
  • salt & pepper

Directions

  • Drain olives  and capers and place in a food processor.
  • Drizzle with olive oil  approx. 1/4 – 1/3 cups.
  • Run food processor until the mixture is partially smooth but still chunky.
  •  Season with salt & pepper to taste, add freshly chopped basil and mix.
  • Chill until ready to serve.
  • Place the filo cups on a tray and fill with the tapenade.
  • Top with shredded mozzarella and fresh basil.

This recipe yields 1 quart of tapenade.  You will only use a small amount to fill the cups but you can put the rest out with crackers or save for another time.

Smoked Salmon Spinach Filo Bites

Ingredients

  • 1 24oz. container sour cream
  • 1 small jar capers (drained)
  • 1 small red onion (minced)
  • 2 boxes spinach filo cups
  • 1 small package smoked salmon
  • 1/4 cup fresh dill (stemmed, roughly chopped)

Directions

  • Add minced onion and drained capers to the sour cream and mix.
  • Chill until ready to serve allowing the flavors to blend.
  • Place filo cups on a tray and fill with sour cream mix.
  • Top with smoked salmon and fresh dill.

This sour cream is also delicious on steak, fish or baked potatoes, so using a 24oz. container allows you to have plenty left over for later use.
