Asparagus & Goat Cheese Tart

Ingredients

  • 1 box puff pastry
  • 1 bunch asparagus
  • 1 medium shallot
  • 1 large package goat cheese
  • extra virgin olive oil
  • salt & pepper

Directions

Puff Pastry

  • On a floured surface, roll out thawed puff pastry to fit into a tart pan or a shallow rectangular (greased) baking dish. Roll out enough to have an overhang on the sides then tuck under and crimp the edges.
  • Poke the dough all over with a fork and blind bake at 350 degrees for 10 minutes.
  • Set aside to cool.

Directions

  • Bring the goat cheese to room temperature.
  • Cut the white ends off of the asparagus.
  • Place on a baking sheet, drizzle with oil and lightly season with salt & pepper.
  • Bake at 375 degrees for 10 minutes.
  • Set aside to cool.
  • Mince the shallot and lightly saute in some olive oil.

Assembly

  • Spread the goat cheese on to the puff pastry.
  • Top with the roasted asparagus and sautéed shallots.
  • Bake at 350 degrees for 10 minutes.  If the cheese hasn’t melted enough continue to bake in 5 minute increments until melted.
