Butterfly Frittatas

Are you looking for a whimsical snack for brunch? Do you have cupcake pans that haven’t been used as often as you had hoped? Are you looking for the perfect portion for your child? These butterfly frittatas are the answer.


  • 4 eggs (beaten)
  • 1 tsp. salt
  • 1 tsp. pepper
  • assorted vegetables of your choice


  • Preheat oven to 350
  • Fill cups 1/2 way with eggs
  • Add assorted vegetables
  • Bake for 10-12 minutes
  • Let cool 5 minutes then remove frittatas from the pan
