Lasagna Stuffed Peppers

I saw this recipe on Facebook and wanted to test it out.  For the most part it’s spot on, however, I added water to the pan during the first bake of the peppers to steam them and they were still pretty hard after 20 minutes so I baked them for another 15 minutes.  Once filled I baked them for 25 minutes, then set the oven to broil on HIGH for 2-3 minutes to brown the cheese topping.  I did a vegetarian version with diced zucchini and fresh garlic but anyway you stuff it, peppers are nature’s perfect bowl.
